This recipe is straight from my mom’s Mexican friend who makes the BEST mexican food.
- 3 ripe avocados
- 1 fresh tomato chopped
- 3 green onions chopped
- 1 small can green diced chilies
- 1/4 cup cottage cheese (which if you want to veganize, just omit…it’s not totally essential)
- 1/2 cup thinly shredded iceberg lettuce (sounds weird but it adds a good texture)
- Tabasco sauce to taste
- juice of 1/2 lime
- 1/4 tsp onion salt
- 1/4 tsp garlic salt
- salt and pepper to taste
Using a fork, coarsely mash up avocados, I like mine still pretty chunky. Add the remaining ingredients and mix well. Adjust salt, pepper, lime, Tabasco etc according to preferences.
