Dinner Tonight:
Lemony-Garlicky Sauteed Spinach
Oven Roasted Tomatoes-topped off with a little balsamic vin
Baked Onion Rings (under the zucchini slices and served with some marinara)
Baked Sweet Potato Fries (with some 0% Fage for dipping)
Baked Crispy Zucchini Slices (also served along with a little marinara)
Ingredients
2 zucchini
olive oil
whole wheat bread crumbs
grated parmesan
garlic powder

Directions
- Preheat oven to 425 and line a baking sheet with tin foil and a little spritz of oil
- Slice zucchini around 1/4 in thick slices
- Place in a large zip lock bag along with 2 T EVOO, a hefty portion of ww bread crumbs (enough to give a decent coating), dash of parm cheese (depending on your preference), dash of garlic powder, salt and pepper
- Shake shake shake
- Evenly displace on the baking sheet (if you put them too close together or over lap them they won’t get as crispy)
- Bake in the oven for around 15-20 min…just keep your eyes on them till they brown…I didn’t even end up flipping them!
